Clean and cut up the raw vegetables in sticks, slices or fancy shapes. Dry the lettuce leaves and arrange them to cover a serving plate. Begin arranging the raw vegetables in a pleasing design on the lettuce leaves.
Make the Pepper Cups and add the dressing to the cups.
Set the Pepper Cups on the plate or arrange them on a separate plate lined with crisp lettuce leaves. Place a spoon in each cup.
Cover all with plastic wrap and refrigerate until serving time.
