Cut a zig zag line around each pepper removing the top and leaving a scallopped edge. Clean out the center of the pepper as well as the underside of the pepper top.
Wash and dry well. Fill each pepper almost to the top with dressing, putting the green dressing in the orange pepper, the white dressing in the green pepper and the orange dressing in the yellow pepper.
Arrange the peppers on the Veggie Tray or on a lettuce lined plate of their own. Place the tops back on each pepper and refrigerate until serving time.
To serve place the tops leaning against the pepper and place a spoon in each Pepper Cup.
